Copper colour in a glass, nice moderate hop aroma with toasty bread, a sweet caramel or even maple touch mixed with an earthiness and wood tones (cedar or pine). Very nice aroma.

Cedar hops flavour, firm but not very strong, paired nicely with that malt flavour I mentioned in the aroma that is somewhere between caramel and maple with just a kiss of smoke. There is also an earthy flavour that mellows and broadens the flavour of the whole beer and although there is a caramel/maple tone Empirical Ale isn't particularly sweet. The mouthfeel isn't heavy, it has a watery aspect that keeps this beer refreshing and really goes well with the restrained hops flavour and the only moderate sweetness. I think this is an excellent beer and would say it most resembles an English IPA though the hops character is that of a North American hops.

Irish Potato Stout - Black Creek Historic Brewery (Canada - Ontario - Toronto) 5.0%

Opaque in a glass with a thin tan coloured head. This beer pours quite flat but is carbonated well enough on the tongue. Earthy, roasty, smoky aroma with a sweet dark fruit aspect as well. Dark chocolate tones and coffee are mixed in there with a very, very faint black licorice impression.

Smooth mouthfeel, smoky yet sweet dark chocolate flavour - earthy as well with some dark fruit flavours. Stick to your ribs thick actually. I had never heard of a stout (or any beer for that matter) made with actual potatoes but you can certainly tell there is an extra ingredient here. It is not in the flavour but just based on how hearty this Black Creek ale is: I'm pretty sure I could live off a strict Irish Potato Stout diet.

Pumpkin Ale 2013 - Black Creek Historic Brewery (Canada - Ontario - Toronto) 5.0%

A dark amber but appropriately orange also with a thin head. The aroma is very strongly pumpkin and spices: ginger, cinnamon, nutmeg and maybe a hint of cloves. An extremely appetizing aroma and, even though it has a hefty spiced character, distinctly pumpkin.

The taste is pumpkin and the same yummy spices from the aroma with a little dry hops. The finish is very roasty and sweet with lingering pumpkin and spices. So, basically, there are flavours of pumpkin and spices throughout but they are most strongly in the aroma. After I got over the step down in intensity from the initial aroma to the taste I found Black Creek's Pumpkin Ale to be most delightful and very refreshing on this unseasonably hot day at the end of August.

This beer has quite the aroma that I could smell immediately upon opening the bottle, even before I poured it: distinctly rye with some bitter cedar hops and a earthiness that gives the historic brew a rustic feeling of authenticity. A lovely glowing deep orange in a glass with a thin head that lacks some staying power.

Strong rye notes, grainy and hearty all in one, with cedar and resin hops flavours that demand to be taken seriously the moment the rye lead flavour subsides just a bit. The earthen tones of the aroma carry through in the flavour and, to my taste, do an excellent job of bringing together the hearty rye flavour, the Cracker-Jack caramelized sweetness with the resin and cedar bitterness. The finish is almost sweet with the hops peaking mid-mouth and the coming back strong, sticky and a little peppery in the aftertaste. I should note that I am drinking this quite warm (about 15 degrees Celsius at the time of opening) as I feel suits a historic brew such as this.

Montgomery's Courage is the third of Black Creek Historic Brewery's series of Historic Beers of Canada that brews it's way through the history of Canada one decade at a time, starting with Rifleman's Ration, followed by Dray Horse Ale and now Montgomery's Courage. Not only is it a delightfully historic recipe but it is so well balanced and delightful I think it will have to be the benchmark against which I measure all other Rye Pale Ales from this point onward. I look forward to whatever the Black Creek Historic Brewery has planned next.

A dark slightly cloudy brown in a glass without much of a head, in fact it came out of the bottle less carbonated than most beers - suitable for a historic recipe however. The aroma is sweet and chocolatey (like chocolate cake) with a bit of a grain and roast and something bordering on dark, and perhaps red, fruit esters.

A light, watery mouthfeel belies the powerful mix of flavours: chocolate yes but also other hearty dark malt traits, brown bread with a bit of grain, some wood tones, light fruit esters and just a bit of acidity. It's quite a delicious brown ale. I look forward to seeing what the next 'decade' brings.

A rosy brown colour in a glass with a subdued head that fades quite quickly but leaves nice lacing. I'm not sure how unfiltered it is but there was zero sediment. A smoky, extremely roasty aroma with some grain, lots of wood tones, a floral touch as well as an earthy touch. Also an aroma like the crust of well baked brown bread and a bit tartly astringent as if it was higher in alcohol than only 5.0%.

The taste is all that and more. Molasses, palpable smokiness, wood tones, piles of roast, brown bread, a milk chocolate aspect, a bit a fresh cut grass taste from the hops and a slight taste of alcohol with a chest-warming booze sensation (5% really?) that combines with the other flavours already mentioned to be a little rum-like. An umami and brown bread aftertaste with a touch of molasses and smoke. A delicious taste indeed to have lingering in your mouth. Definitely follow Black Creek Historic Brewery's recommendation and drink Rifleman's Ration at room temperature.

I can't say enough about how much I like the concept of this beer and brewery. For me, trying historic beers brewed according to old recipes is one of my favourite spin offs of the craft beer revolution. Garrison makes a Spruce Beer that is a similar concept though with a different flavour and different ingredients.

Black Creek Pale Ale (Canada - Ontario - Toronto)

Black Creek Pale Ale (Canada - Ontario - Toronto) 5.0%

Strongly malty aroma with molasses and roast. Also a bitter mildly hoppy aroma in the background. A fairly dark amber colour, bordering on brown, in a glass.

Sweet, malty taste with a hint of honey, more than a touch of roast with a light grain finish. Moderately bitter to go along with quite a bit of spicy vegetal hops flavour. Black Creek Historic Brewery's Pale Ale is a bit like a darker (in both colour and flavour) version of a Standard Bitter English Pale Ale and doesn't quite have the strong hops flavour of an American Pale Ale. Being made with a receipe from the 1800s, I'm not sure of the exact style category this Pale Ale would fall under (let me know in the comments if you know), but it is really quite a nice Pale Ale.
